Ki No Bi Kyoto Dry Gin
Ki No Bi is a Kyoto Dry Gin that uses a rice distillate as a base and an exclusive selection of botanicals: yellow yuzu, Japanese cypress, red shiso leaves, bamboo, gyrokuro tea from the Uji region and Japanese pepper berries. Fushimi water, known for its purity, is then used to cut the distillate.
The botanicals are divided into six different categories: base, citrus, tea, herbs, spices and flowers. They are then distilled separately and reassembled.
The distillery has two pot stills of German origin: a 140-liter still with an integrated basket for botanicals and a 450-liter swan-neck still. The different shapes and sizes give the possibility to treat each botanical individually, thus allowing to extract only the best aroma from each ingredient.
