The town of Hepple is located in one of the areas of England richest in botanicals, where green juniper is harvested. An innovative three-level process is used to extract all the essence of this lush land. The starting alcoholic base is a traditional gin, where the heavier botanicals are distilled together with the grain in a discontinuous still . Subsequently the more delicate ones are vacuum distilled separately, in order to capture the essence of each one. Finally the green juniper is extracted using a special high-pressure CO2 machine that allows to reach the heart of the plant keeping its characteristics intact. The result of the second and third steps is then combined with the gin coming out of the first still.
