The grapes come from Burgundy, in the Yonne area, more precisely in the surroundings of Auxerre. The 25-year-old vines are rooted in a terroir composed of clay marl and Jurassic limestone. All the elegance of Pinot Noir in one of the most suitable areas for its production. It has an intense ruby ​​red color with purple reflections. The nose is dominated by aromas of morello cherries and raspberries. In the mouth the wine is fresh, round with discreet and elegant tannins. Ideal with roast chicken, grilled red meat, braised meats and semi-mature cheeses.

Simonnet Febvre

Founded in 1840, Maison Simonnet-Febvre is one of the oldest wineries in the area. The company grew in the 19th century under the guidance of 4 successive generations. Melanie, daughter of Jean Febvre, married Amedee Simonnet. Hence the current name of the House. Their two children Georges and Camille then took over the business and gave it a significant boost with their progressive vision: modernization of the facilities, construction of the cellar and loading platform. These improvements went hand in hand with the increase in domestic sales and exports. Today Simonnet-Febvre produces a wide range of wines that express the different terroirs of the Chablis and Grand Auxerrois vineyards. Purchased by Maison Louis Latour in 2003, it is now led by Jean-Philippe Archambaud who has succeeded in inspiring a new dynamic while maintaining the independent style that has always distinguished Simonnet-Febvre: pure and concentrated wines that express their unique identity in relation to their terroir with the typical minerality of Chablis and northern Burgundy as a common framework.
