Pajè is one of the historic vineyards of Barbaresco and is located in the center of the vineyard area of the town. This vineyard was born from the disintegration of the Rocche. For this wine, young plants up to 20 - 25 years of age are used. The vines are exclusively of massal origin, with wood obtained by pruning from the same vineyards. The harvest is done manually in October, at perfect physiological ripeness, in small boxes. Before being vinified, the grapes undergo 2 manual selections to check the perfect integrity of the fruit. Fermentation takes place exclusively in wooden vats, thanks to a pied de cuve of indigenous yeasts. It lasts for about ten days. The ancient maceration technique of submerged cap splinting is then applied, which lasts at least 2 months (60 days). The wine ages in a neutral oak barrel for about five years.
Roagna
Cantina Roagna is located in Barbaresco, in the heart of the Langhe and produces wines that are a pure and authentic expression of the territory. To achieve this goal, it has chosen to work with old vines, with very deep root systems and capable of producing grapes with great aromatic concentration. The soils are of marine sedimentary origin, with stratifications of calcareous clay alternating with gray-bluish marl and sand. The authenticity of each individual and different expression comes from minimal differences in the subsoil. The vineyards are not fertilized, no herbicides or pesticides are used and the soil is completely grassed over, so that biodiversity is stimulated and the root systems are forced to go deep. The vines in the vineyards come from wood from local mother vines, so as to maintain a heterogeneous population of plants.
